  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons flax seeds
  • 2 teaspoons coarse salt
  • 2 tablespoons honey
  • 1.5 cups warm water

Instructions

  1. In a large bowl, whisk together flour and yeast. Add oats, pumpkin seeds, sunflower seeds, flax seeds, and salt; mix well.
  2. Combine honey with warm water and pour over dry ingredients. Stir gently until all flour is moistened; the dough will be sticky.
  3. Cover tightly with plastic wrap; let rise at room temperature for about 3 hours or until doubled in size.
  4. Refrigerate the dough for at least 12 hours (up to 3 days) for better flavor.
  5. Shape the dough into a ball on a floured surface; transfer to a baking sheet dusted with cornmeal.
  6. Optionally sprinkle toppings on top; cover loosely and let rest for an additional 45 minutes while preheating oven to 425°F (218°C).
  7. Score the top of the loaf about half an inch deep; bake for around 40 minutes until golden brown.
