  • 1 cup panko breadcrumbs
  • 1 cup milk
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 pounds ground beef
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, soak panko breadcrumbs in milk.
  3. Sauté diced onions in melted butter until fragrant, then add minced garlic.
  4. In a large bowl, combine ground beef, soaked bread crumbs, egg, Worcestershire sauce, salt, thyme, and sautéed onions and garlic. Mix gently.
  5. Shape into a loaf on the baking sheet and score the top with a crisscross pattern.
  6. Bake for 40 minutes. While it bakes, mix ketchup with brown sugar and mustard for the topping.
  7. After the first bake time, spread the sauce over meatloaf and bake for another 30-35 minutes until cooked through.
