Ingredients

Scale
  • 1 pound orzo pasta
  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup white grape juice (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • Fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large skillet or Dutch oven over medium heat, sauté olive oil and butter until melted. Add diced onion; cook until softened (about 5 minutes). Stir in minced garlic and red pepper flakes for an additional minute.
  2. Add orzo pasta; toast for 1-2 minutes while stirring. Pour in chicken broth and optional white grape juice; bring to a boil then reduce heat to low. Cover and simmer for about 10-12 minutes until most liquid is absorbed.
  3. Gently nestle shrimp into the orzo; cover again for another 3-5 minutes until shrimp are pink.
  4. Remove from heat; stir in Parmesan cheese and heavy cream until melted into a creamy sauce. Add fresh lemon juice and parsley; adjust seasoning as needed.
  5. Serve immediately with extra Parmesan on top.
