  • 16 ounces fresh potato gnocchi
  • 2 ½ cups cooked chicken (torn into pieces)
  • 1 cup sweet peas (fresh or frozen)
  • 1/4 cup fresh parsley (chopped)
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup all-purpose flour (or GF flour blend)
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon nutmeg (optional)
  • Salt and freshly ground black pepper
  • Grated Parmesan for serving (optional)

Instructions

  1. Melt the butter in a large skillet over medium heat. Add sliced carrots, diced celery, chopped onion, and salt; cook for about 6–8 minutes until softened.
  2. Stir in quartered mushrooms and minced garlic; sauté until mushrooms release their moisture, about 5 minutes.
  3. Sprinkle in flour and stir well; cook for an additional 2 minutes.
  4. Gradually whisk in chicken stock and milk; add Dijon mustard and Italian seasoning. Stir continuously until smooth.
  5. Bring the mixture to a simmer before adding gnocchi; cook uncovered for about 4–5 minutes.
  6. Stir in cooked chicken and sweet peas; simmer until heated through, about 3–4 minutes.
  7. Fold in fresh parsley and thyme, adjusting salt and pepper as needed.
