Oven Roasted Asparagus is a quick, healthy side dish that transforms the humble asparagus into a flavorful delight with the addition of parmesan cheese and lemon zest.   • 1 lb asparagus (thin-cut preferred)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated parmesan (divided)
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 425ºF and spray a baking sheet with nonstick cooking spray.
  2. Snap off the ends of the asparagus and place them on the baking sheet.
  3. Drizzle with olive oil and toss to coat evenly.
  4. Season with salt and pepper; toss again.
  5. Sprinkle half of the parmesan cheese and lemon zest over the asparagus; toss to combine.
  6. Roast for about 8 minutes, then sprinkle remaining parmesan on top. Return to oven for an additional 2-4 minutes until tender-crisp.
  7. Serve warm, garnished with extra lemon zest if desired.
