  • 2 large eggs
  • ½ cup champagne or sparkling wine
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter, room temperature
  • 3–4 cups powdered sugar, sifted
  • 3–4 tablespoons peach puree
  • 1–2 tablespoons champagne or sparkling wine
  • Pinch of salt
  • Fresh peach slices
  • Candied peach or cherry (optional)
  • Sparkling sugar or granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy before adding eggs one at a time.
  4. Mix champagne, milk, vanilla extract, and peach puree in a separate bowl.
  5. Combine dry ingredients alternately with wet ingredients into the butter mixture until just mixed.
  6. Fill cupcake liners two-thirds full and bake for 18–20 minutes until a toothpick comes out clean.
  7. Cool completely before preparing the frosting by beating butter then gradually adding powdered sugar, peach puree, and champagne until fluffy.
  8. Frost cooled cupcakes and garnish as desired.
