  • 1 cup granulated sugar
  • 8 Tbsp softened butter
  • 2 Tbsp sour cream
  • 1 Tbsp mayonnaise
  • 1 teaspoon baking powder
  • 4 cups all-purpose flour
  • 2 oz cream cheese
  • 5 oz dulce de leche
  • 2 Tbsp apricot jam
  • Red and orange food coloring for decoration

Instructions

  1. Preheat your oven to 350°F. In a large bowl, whisk together eggs and sugar; stir in softened butter, then add sour cream and mayonnaise.
  2. Combine baking powder and flour in another bowl; gradually add to wet ingredients until a soft dough forms.
  3. Roll tablespoon-sized balls of dough and place on a parchment-lined baking sheet. Bake for about 15 minutes or until lightly golden.
  4. Once cooled, hollow out the centers of the cookies. In a separate bowl, beat cream cheese and butter until smooth; mix in dulce de leche and apricot jam, then fold in cool whip.
  5. Fill each cookie with the cream mixture and pair two halves together. Chill for at least two hours before decorating.
  6. For decoration, dip half the cookie in diluted food coloring, dredge in sugar, and let set before serving.
