  • 1/3 cup vegetable oil or olive oil
  • 1/2 cup creamy peanut butter
  • 2/3 cup brown sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix vegetable oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until combined.
  4. Pour wet ingredients into dry ingredients and gently stir until just combined.
  5. Fold in shredded zucchini and chocolate chips.
  6. Spread batter into prepared loaf pan and bake for 55–70 minutes or until a toothpick inserted comes out clean.
  7. Let cool in pan for an hour before transferring to a wire rack.
