  • 15 Oreo cookies
  • 3 tablespoons unsalted butter (melted)
  • 1 cup smooth peanut butter
  • 1/4 cup unsalted butter (softened)
  • 3 tablespoons brown sugar
  • 1 2/3 cups powdered sugar
  • 6 ounces semi-sweet chocolate
  • 2 teaspoons shortening

Instructions

  1. Prepare an 8×8 inch pan by lining it with parchment paper.
  2. Crush the Oreo cookies into fine crumbs and mix with melted butter. Press this mixture into the bottom of the prepared pan.
  3. In another bowl, beat softened butter, brown sugar, and salt until combined. Mix in smooth peanut butter and gradually add sifted powdered sugar until creamy.
  4. Spread the peanut butter filling over the crust evenly and chill while preparing the chocolate topping.
  5. Melt semi-sweet chocolate with shortening in short bursts until smooth. Pour over chilled peanut butter layer and spread evenly.
  6. Refrigerate for at least one hour to set before lifting out of the pan using parchment overhang and cutting into squares.
