  • 500g bread flour
  • 100g active sourdough starter
  • 350ml water
  • 10g salt
  • 1/2 cup basil pesto
  • 1/2 cup grated parmesan cheese

Instructions

  1. Mix bread flour, water, and sourdough starter in a bowl until combined. Let rest for 30 minutes.
  2. Add salt and mix until evenly distributed.
  3. Perform stretch and folds every 30 minutes for two hours.
  4. Spread dough on a floured surface, layer with pesto and parmesan, then shape into a ball.
  5. Place in banneton and refrigerate overnight (8–12 hours).
  6. Preheat oven to 475°F (245°C) with a Dutch oven inside.
  7. Score top of the dough on parchment paper before baking.
  8. Bake covered for 20 minutes, then uncovered for another 25 minutes until golden brown.
  9. Cool on a wire rack before slicing.
