  • 1 pound chicken breast (cubed)
  • 1 cup pineapple (cubed)
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • Soy sauce
  • Ginger
  • Green onions
  • Sesame seeds

Instructions

  1. In a large skillet over medium heat, heat olive oil and cook chicken until golden brown. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Stir in pineapple and cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  5. Lower heat, cover, and simmer for 18–20 minutes until rice is tender.
  6. Return chicken to skillet and mix well before garnishing with green onions and sesame seeds.
