  1. Cut the pineapple in half lengthwise, scooping out the flesh to create boats while reserving chunks for the sauce.

  3. In a bowl, whisk together reserved pineapple chunks, soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, and minced garlic.
  4. Pour the teriyaki sauce over the chicken in the skillet and simmer on low for about 10 minutes until thickened.
