  • 5 chicken drumsticks (or 4 chicken thighs)
  • 3 slices ginger
  • 1 scallion
  • 3 tablespoons vegetable oil
  • 3 scallions (white and green parts separated)
  • 2 tablespoons light soy sauce
  • 1/2 teaspoon sugar
  • 1/2 cup water

Instructions

  1. In a medium pot, bring 4 cups of water to a boil with 3 slices of ginger and 1 scallion. Add the chicken and return to a boil. Reduce heat and simmer for about 10 minutes.
  2. Turn off the heat and let the chicken sit covered for another 15 minutes.
  3. Transfer the chicken to ice water for five minutes, then shred onto a serving plate.
  4. For the sauce, heat vegetable oil in a saucepan over medium-low heat. Sauté scallion whites until crisp, then add soy sauce, sugar, and reserved cooking water.
  5. Bring to a boil, stir in minced ginger and chopped scallion greens, adjust seasoning if needed, then pour over shredded chicken.
