  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose or light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your baking sheet by greasing a piece of baking paper and placing it on a tray.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan, combine sugar, water, corn syrup, and food coloring over medium heat until sugar dissolves.
  4. Allow the mixture to simmer without stirring. Wash down the sides of the pot with a wet brush to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF). Use a cold water test if needed.
  6. Dip each apple into the hot caramel mixture until fully coated.
  7. Place dipped apples on the prepared sheet to cool completely.
