  • 1 sheet of puff pastry (320g/11.3oz)
  • 150g/5oz sharp cheddar cheese (grated)
  • 1/4 cup/60ml heavy cream
  • 1 large white potato (300g/10.5oz, diced)
  • 1 large onion (150g/5oz, grated)
  • 1 tbsp butter
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. In a large pan over medium heat, fry diced potatoes in oil or butter until crispy outside and soft inside (about 15-20 minutes). Season with salt and pepper. Add grated onion and cook for one more minute.
  2. Transfer the mixture to a bowl; cool slightly. Stir in cheese, mustard, heavy cream, and seasonings until well combined.
  3. Roll out the puff pastry into four rectangles. Place filling on one side of each rectangle, brush edges with beaten egg wash, fold over, and seal with fingers or a fork.
  4. Arrange pasties on a lined baking tray; brush tops with egg wash. Bake in a preheated oven at 200C/390F for 15-20 minutes until golden brown.
