  • 1 yellow onion (diced)
  • 2 celery stalks (diced)
  • 1 medium carrot (diced)
  • 3 garlic cloves (minced)
  • 1 ½ lbs yellow potatoes (peeled and diced in 1 inch cubes)
  • 4 cups vegetable broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup 2% milk
  • ½ cup heavy cream
  • 1 cup cottage cheese
  • ½ cup shredded cheddar cheese

Instructions

  1. Heat avocado oil in a large pot over medium heat. Sauté diced onion, celery, and carrot for 3-4 minutes until the onion is translucent. Add minced garlic and sauté for another minute.
  2. Stir in diced potatoes, vegetable broth, salt, and black pepper. Bring to a simmer, cover, and cook for about 15 minutes until potatoes are fork-tender.
  3. Remove from heat; stir in milk, heavy cream, and cottage cheese. Blend until smooth using an immersion blender or in batches with a high-speed blender.
  4. Return to low heat; stir in shredded cheddar cheese until melted. Serve hot.
