  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 to 1.5 cups protein (lean ground turkey, black beans, chickpeas, or shredded chicken)
  • 2 cloves garlic, minced
  • Fresh spinach
  • 12 tablespoons olive oil
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (cheddar, mozzarella, or vegan cheese alternative)
  • Fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and slice sweet potatoes in half lengthwise. Drizzle with olive oil and sprinkle with salt.
  2. Roast sweet potatoes cut-side down on a baking sheet for 35-45 minutes until tender.
  3. Meanwhile, heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened. Add your chosen protein and cook through.
  4. Stir in garlic, spices, and fresh spinach until wilted.
  5. Once sweet potatoes are roasted, scoop out some flesh to create cavities and mix it with the filling. Fill each half generously and top with cheese if desired.
  6. Return to the oven for another 10 minutes or until cheese is melted.
