  • 1 teaspoon coconut oil
  • 1/4 cup natural creamy peanut butter
  • 2 tablespoons pure maple syrup
  • 1/3 cup vanilla protein powder
  • 1/4 teaspoon salt

Instructions

  1. Line a muffin tin with parchment paper liners.
  2. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals until melted, stirring between intervals. Stir in vanilla extract.
  3. Pour a heaping teaspoon of melted chocolate into each muffin liner and spread evenly.
  4. Chill the chocolate base in the refrigerator.
  5. In another bowl, microwave peanut butter for 15-20 seconds until runny. Mix in maple syrup, protein powder, and salt until smooth.
  6. Spoon the peanut butter mixture over the chilled chocolate base.
  7. Top with remaining melted chocolate to cover completely.
  8. Refrigerate for one hour until set.
