  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 stick (113 grams) unsalted butter, (at cool room temperature, for frosting)
  • 1/4 cup (50 grams) packed light brown sugar, (for frosting)
  • 1/2 teaspoon ground cinnamon, (for frosting)
  • 1/8 teaspoon fine sea salt, (for frosting)
  • 1 1/2 cups (188 grams) powdered sugar, (sifted, for frosting)
  • 1/2 teaspoon vanilla extract, (for frosting)
  • 1 tablespoon milk, (plus more if needed, for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine melted butter, brown sugar, egg, vanilla extract, and pumpkin puree until smooth.
  3. In another bowl, mix flour, cinnamon, ginger, nutmeg, baking soda, and salt.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Pour batter into prepared pan and bake for 25 minutes or until a toothpick comes out clean.
  6. For the frosting, beat together butter and brown sugar; gradually add powdered sugar and milk until desired consistency is reached.
  7. Allow bars to cool completely before frosting.
