  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • 3 ½ cups brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup unsalted butter, cold and cubed
  • ¼ cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan.
  3. Beat softened cream cheese until smooth. Add pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice; mix until well combined. Pour over the crust.
  4. In another bowl, combine flour, oats, cold butter cubes, and brown sugar for the streusel topping. Mix until crumbly and sprinkle over the filling.
  5. Bake for about 45 minutes until set around edges but slightly jiggly in the center. Cool completely before refrigerating for at least two hours before slicing.
