Warm your home and heart this autumn with delightful Pumpkin Dumplings! These tender dumplings are infused with the comforting flavors of Hokkaido pumpkin, sautéed onions, and fresh herbs, making them a perfect side dish for cozy family dinners or festive gatherings.

Ingredients

  • 600 g Hokkaido pumpkin flesh
  • 300 g day-old bread
  • 1 onion
  • ½ bunch parsley
  • 2 tbsp pumpkin seeds
  • 1 tbsp butter
  • 2 eggs (size M)
  • Salt and pepper to taste
  • 4 tbsp flour (add more if needed)
  • 2 tbsp semolina
  • 40 g Parmesan cheese

Instructions

  1. Prepare the Pumpkin: Wash and cut the Hokkaido pumpkin into cubes. Cook in salted water over medium heat for about 10 minutes until tender.
  2. Prep Your Ingredients: Dice the bread and chop the onion and parsley. Toast the pumpkin seeds in a pan until fragrant.
  3. Mix Everything Together: Once cooled, drain the pumpkin and mix with bread cubes in a large bowl.
  4. Sauté Onions: Melt butter in a skillet, add chopped onions, and sauté until translucent.
  5. Combine & Chill: Add sautéed onions, beaten eggs, parsley, flour, semolina, salt, and pepper to the pumpkin mixture. Knead until smooth and chill for about 30 minutes.
  6. Shape & Cook: Shape into dumplings with wet hands. Simmer gently in salted water for 10-15 minutes until they float.
  7. Finish & Serve: Once cooked, lightly pan-fry for added texture. Serve topped with grated Parmesan and toasted pumpkin seeds.
