  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped, for topping)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix all-purpose flour, whole wheat pastry flour, baking powder, granulated sugar, cinnamon, ginger, and salt.
  3. In another bowl, whisk together pumpkin puree, milk, melted butter, and vanilla until smooth.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Pour batter into a greased casserole dish.
  6. For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
  7. Carefully pour hot water over the topping without stirring.
  8. Bake for about 40 minutes or until the center is set. Cool slightly before serving.
