Instructions

  1. Prepare a baking sheet lined with parchment paper or spray a mini muffin tin lightly with cooking spray.
  2. Melt the dark chocolate in a microwave-safe bowl or double boiler. If using peanut butter, add it when the chocolate is melted and stir until smooth.
  3. Gently fold in the puffed quinoa until well-coated with chocolate.
  4. Spoon the mixture onto the prepared baking sheet or fill muffin tin compartments. Sprinkle flaky salt on top if desired.
  5. Chill in the fridge for about 30 minutes until firm, then break into pieces or pop out of the muffin tin.
