  • 1 cup whipping cream
  • 2 packages ladyfingers
  • 1 cup lemon curd
  • About 2 pints of raspberries for garnish

Instructions

  1. Prepare the raspberry sauce by simmering raspberries, sugar, lemon juice, and water until thickened. Blend for a smooth consistency if desired.
  2. Whip cream with sugar until soft peaks form. Mix mascarpone with vanilla extract and lemon zest until smooth. Fold in whipped cream.
  3. Assemble by layering ladyfingers, raspberry sauce, mascarpone mixture, lemon curd, and fresh raspberries in an 8×8 inch dish.
  4. Chill for at least three hours before serving.
