  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice (optional)
  • 1 cup heavy whipping cream (chilled)
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tsp unflavored gelatin powder (optional)
  • 2 tbsp cold water (if using gelatin)

Instructions

  1. Rinse raspberries and combine with granulated sugar and lemon juice in a bowl. Let sit for 10 minutes.
  2. In another bowl, whip chilled heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract until stiff peaks are achieved.
  3. Gently fold the raspberry mixture into the whipped cream using a rubber spatula.
  4. If desired, dissolve gelatin in cold water and heat until dissolved; then fold into the raspberry mixture.
  5. Spoon mousse into serving dishes and refrigerate for at least 2 hours to set.
  6. Garnish with extra raspberries before serving.
