  • 960 ml chicken broth
  • 240 ml heavy cream
  • 225 g large shrimp, peeled and deveined
  • 2 red snapper fillets (about 170 g each)
  • 15 ml olive oil
  • 14 g unsalted butter
  • 1 tablespoon Cajun seasoning
  • 2 garlic cloves, minced
  • 60 g shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 50 g grated Parmesan cheese

Instructions

  1. To make the grits, bring chicken broth to a boil in a medium saucepan. Gradually whisk in the grits, reduce heat to low, and cook uncovered for 20-25 minutes until thickened. Stir in heavy cream and cheddar cheese; season with salt and pepper.
  2. Toss shrimp with Cajun seasoning. In a skillet over medium-high heat, heat olive oil and butter; sauté garlic for 30 seconds. Add shrimp and cook for 2-3 minutes per side until pink. Set aside.
  3. Season red snapper fillets with Cajun seasoning. In the same skillet, cook fillets over medium-high heat for about 3-4 minutes on each side until golden and cooked through.
  4. Prepare the Cajun cream sauce by melting butter in the skillet; add garlic, Cajun seasoning, smoked paprika, and chicken broth. Simmer for 2 minutes before adding heavy cream and Parmesan cheese; stir until thickened.
  5. Serve creamy grits topped with red snapper fillets and shrimp; drizzle generously with the Cajun cream sauce.
