  • 32 oz marinara sauce
  • ½ cup olive oil (divided)
  • 15 oz ricotta cheese
  • 1 teaspoon garlic (minced)
  • 1 teaspoon each: dried basil, oregano, parsley
  • 1 yellow onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 egg (whisked)
  • ½ cup half and half
  • ½ cup Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 lb ground chuck (80% lean)
  • ½ lb ground beef

Instructions

  1. Heat half of the olive oil in a large skillet over medium heat; sauté diced onion until translucent.
  2. In a large bowl, mix ricotta cheese, minced garlic, herbs, whisked egg, half and half, breadcrumbs, Parmesan cheese, ground chuck, ground beef, and seasonings until well combined.
  3. Form small meatballs (about 1 inch in diameter) using hands or a cookie scoop.
  4. Cook meatballs by baking at 400°F for 20-25 minutes or simmering them gently in marinara sauce on the stovetop until cooked through.
  5. Serve over pasta or in subs with chopped parsley for garnish.
