  • 1 small green or white cabbage (cored and cut crosswise into 1½-inch slices)
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Optional garnishes: toasted nuts, fresh parsley, lemon wedges, grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the cabbage into 1½-inch thick slices and arrange them on the baking sheet.
  3. In a bowl, whisk together olive oil, minced garlic, paprika, salt, and pepper. Brush the mixture over both sides of the cabbage steaks.
  4. Roast for about 25 minutes until browned on the edges and tender in the center.
  5. Toast chopped nuts in the oven during the last few minutes of roasting.
