  • 7 oz block of feta cheese
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Cube the washed baking potatoes and toss them in one tablespoon of olive oil, salt, pepper, thyme, and oregano.
  2. Spread the seasoned potatoes on a baking sheet in a single layer and roast for about 25 minutes until they begin to brown.
  3. Add the feta block and sliced garlic to the baking sheet. Drizzle with the remaining olive oil and squeeze over lemon quarters.
  4. Roast for another 25 minutes or until the feta is golden and soft, and the garlic is caramelized.
  5. Drizzle honey over the dish before serving and garnish with fresh basil.
