  • 12 ounces pasta (spaghetti or your choice)
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Zest and juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, combine halved cherry tomatoes and unpeeled garlic. Drizzle with olive oil, sprinkle with salt and pepper; toss to coat.
  3. Roast for 20-25 minutes until tomatoes are blistered and garlic is soft. Let cool slightly.
  4. Cook pasta in salted boiling water according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  5. Squeeze roasted garlic into a bowl, add ricotta, Parmesan, lemon zest, and juice; mix until smooth.
  6. Combine drained pasta with the sauce and roasted vegetables, adding reserved pasta water gradually until desired creaminess is reached.
  7. Stir in fresh basil; season to taste before serving.
