  • 38 pound turkey breast
  • 2 tablespoons olive oil
  • 1 ½ tablespoons Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, Italian seasoning, salt, paprika, garlic powder, onion powder, and black pepper to form a paste.
  3. Place the turkey breast in a roasting pan skin side up. Loosen the skin and rub some herb mixture underneath it. Rub the remaining mixture all over the skin.
  4. Roast for about 20 minutes per pound until the internal temperature reaches 160°F (71°C).
  5. Let it rest covered for about 15 minutes before slicing.
