  • 2 salmon filets (46 oz each)
  • ½ lb asparagus, ends trimmed
  • 1 lb baby potatoes, quartered
  • 3 tbsp olive oil
  • ½ tbsp Dijon mustard
  • Garlic powder, onion powder, paprika
  • Salt and pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix garlic powder, onion powder, and paprika; set aside.
  3. Toss quartered potatoes with 2 tablespoons olive oil and half the seasoning mix; spread on one side of a lined baking sheet. Bake for 8 minutes.
  4. Brush salmon filets with Dijon mustard and season with salt and pepper.
  5. After 8 minutes, push potatoes aside and add salmon and asparagus to the baking sheet. Drizzle remaining olive oil over everything and sprinkle with the rest of the seasoning mix.
  6. Bake for an additional 15-20 minutes until salmon is cooked through and potatoes are fork-tender.
