  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. Season salmon with salt, pepper, and lemon juice. In a skillet over medium heat, cook salmon in olive oil for 4-5 minutes on each side until cooked through. Flake into pieces.
  3. In the same skillet, sauté garlic until fragrant (30 seconds). Add spinach and cook until wilted (2-3 minutes).
  4. Lower heat and stir in heavy cream and Parmesan cheese until melted. Add lemon zest, juice, salt, and pepper.
  5. Combine cooked pasta with the sauce and fold in flaked salmon. Adjust consistency with reserved pasta water if needed.
  6. Serve hot, garnished with parsley.
