Samoa Cookie Protein Balls are a deliciously nutritious snack that captures the beloved flavors of Samoa cookies in a healthy, protein-packed form.

Ingredients

  • 1/4 cup shredded coconut (plus 3 tablespoons)
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates (pitted)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 scoop vanilla protein powder (or unflavored)
  • 1/4 teaspoon kosher salt
  • Chocolate chips and coconut oil for coating

Instructions

  1. Preheat the oven to 350°F (175°C) and toast the shredded coconut on a lined baking sheet for about 5 minutes.
  2. In a food processor, blend almond butter, maple syrup, pitted dates, vanilla extract, oats, protein powder, and salt until smooth.
  3. Stir in toasted coconut (1/4 cup), chia seeds, and mini chocolate chips. Shape into balls about one tablespoon each.
  4. Melt chocolate chips with coconut oil in a microwave-safe bowl; dip each ball into chocolate and place on parchment-lined sheets.
  5. Top with remaining toasted coconut and flaky sea salt before chilling for an hour until set.
