  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Carefully slice each acorn squash in half and scoop out seeds. Place cut side down on the baking sheet and bake for 20 minutes.
  3. In a skillet over medium heat, cook the ground turkey sausage until browned.
  4. Add olive oil, onion, kale, garlic, celery, apple, herbs, salt, and pepper to the skillet; sauté until veggies are tender.
  5. Remove baked squash from the oven; scoop out some flesh and mix it into the filling.
  6. Fill each squash half generously with the mixture; return to oven for an additional 15 minutes.
  7. Sprinkle with feta cheese and chopped nuts; bake for another 5 minutes until bubbly.
