  • 400 g Ground lamb (or beef)
  • 1 tsp Onion (finely chopped)
  • 1 tsp White pepper
  • 0.5 tsp Black pepper
  • 0.5 tsp Ground mace
  • 0.25 tsp Ground nutmeg
  • 250 g All-purpose flour
  • 100 g Lard (or butter for vegetarian option)
  • 100 ml Boiling water
  • 1 Egg (beaten for brushing)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine lard and boiling water until melted. Pour over flour and half the salt in a mixing bowl; stir until combined and let cool before kneading to smooth consistency.
  3. In another bowl, mix together ground lamb, onion, white and black pepper, mace, nutmeg, and remaining salt.
  4. Roll out the pastry to about 1/8-inch thick; cut circles for pie bases and tops.
  5. Line pie tins with larger circles and fill with meat mixture. Seal edges with moistened pastry tops.
  6. Brush each pie with beaten egg for shine and bake for 30–35 minutes until golden.
