  • 1 lb dry-packed sea scallops
  • 1 bunch of asparagus, trimmed
  • 2 tbsp butter (divided)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss asparagus with olive oil, salt, and pepper; roast for 10–12 minutes.
  3. Pat scallops dry and season with salt and pepper.
  4. In a saucepan, melt 1 tbsp butter over medium heat. Add garlic and sauté until fragrant. Stir in cream and lemon juice; simmer until thickened.
  5. In a skillet, heat remaining butter and sear scallops for 2–3 minutes per side until golden brown.
  6. Assemble by layering sauce in bowls, topping with asparagus and scallops. Garnish with fresh herbs.
