Ingredients

  • 1 1/2 lbs rainbow carrots
  • 1/4 cup scallions
  • 2 tbsp cilantro
  • 2 tbsp basil
  • 1 1/2 tbsp toasted sesame seeds
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 1/2 tbsp low sodium Tamari or soy sauce
  • 1 tbsp white miso
  • 1 tsp sriracha
  • 1 tsp coconut sugar
  • 1 tsp minced garlic
  • 1 tsp grated ginger

Instructions

  1. Toast sesame seeds in a pan over medium heat for about 5-7 minutes until lightly browned. Set aside.
  2. Wash, peel, and julienne the carrots into thin strips. Place them in a large bowl along with scallions, cilantro, and basil.
  3. In a blender or bowl, whisk together all dressing ingredients until smooth.
  4. Pour dressing over the carrot mixture and toss well to coat. Cover and refrigerate for at least one hour.
  5. Before serving, give it another toss and top with additional sesame seeds and red pepper flakes if desired.
