  • 1 celery stalk, coarsely chopped
  • 1 carrot, coarsely chopped
  • 1 pound ground chuck beef
  • 2 (14-ounce) cans crushed cherry tomatoes
  • 1/4 cup flat-leaf Italian parsley, chopped
  • 8 fresh basil leaves, chopped
  • Salt and black pepper to taste
  • 1/4 cup freshly grated Pecorino Romano cheese
  • 1 lb pasta (mezzi rigatoni or pappardelle)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft, about 8 minutes.
  2. Add celery and carrot; cook for an additional 5 minutes.
  3. Increase heat to high; add ground beef. Cook until browned, about 10 minutes.
  4. Stir in crushed tomatoes, parsley, and basil. Let the sauce simmer for about 30 minutes; season with salt and pepper.
  5. Meanwhile, boil salted water in a large pot and cook pasta until al dente (2 minutes less than package instructions).
  6. Transfer cooked pasta to the sauce using tongs; gently stir to combine.
  7. Serve topped with additional olive oil and cheese.
