  • 1½ pounds lean ground beef
  • 1¾ cups ketchup
  • 3 tablespoons avocado oil
  • nonstick spray
  • 1 tablespoon all-purpose season salt
  • 1 teaspoon dried parsley
  • ½ teaspoon freshly ground black pepper
  • ¼ cup parmesan cheese (freshly grated)
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 tablespoon prepared mustard
  • ½ teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • sliced dill pickles
  • pickled red onions
  • sliced raw jalapeños
  • snipped chives or sliced green onions

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice sweet potatoes and toss with avocado oil and seasonings; spread on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. In a skillet, cook ground beef until browned; drain excess fat.
  5. Add ketchup and other sauce ingredients to the beef; simmer for 10 minutes.
  6. Assemble bowls with roasted sweet potatoes as the base, topped with sloppy joe sauce and your choice of toppings.
