  • 2 ½ pounds beef stew meat
  • 3 tablespoons olive oil
  • 2 cups yellow onions (diced)
  • 4 cloves garlic (minced)
  • 4 cups beef broth
  • 5 medium carrots (cut into chunks)
  • 1 lb baby Yukon gold potatoes (halved)
  • 1 cup frozen peas
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • ¼ cup flour
  • 2 beef bouillon cubes
  • 3 tablespoons tomato paste
  • 2 bay leaves
  • 1 sprig rosemary
  • 1/4 cup cold water + 3 tablespoons cornstarch (optional)

Instructions

  1. Cut the beef into cubes, season with black pepper, garlic salt, celery salt, and coat with flour.
  2. Heat olive oil in a skillet over medium-high heat, brown the meat in batches, then transfer to the slow cooker.
  3. Sauté onions and garlic in the same skillet until translucent; deglaze with apple vinegar and add to the slow cooker.
  4. Add remaining ingredients except for peas; stir well.
  5. Cook on low for 7½ to 8 hours or high for 3½ to 4 hours until tender.
  6. In the last 15 minutes, add frozen peas.
  7. For thicker stew, mix cornstarch with cold water and stir in before serving.
