  • 1/2 cup panko breadcrumbs
  • 1/3 cup finely grated Parmesan cheese
  • 1/2 cup minced yellow onion
  • 1/3 cup chopped fresh parsley or basil
  • 3 cloves garlic, minced
  • 1 tablespoon kosher salt
  • 1 teaspoon dried oregano
  • 2 pounds ground chicken
  • 5 cups marinara sauce (divided)
  • 2 cups shredded mozzarella cheese (optional)

Instructions

  1. Pour half of the marinara sauce into a slow cooker.
  2. In a large bowl, whisk the eggs and mix in breadcrumbs, Parmesan, onion, herbs, garlic, salt, oregano, and black pepper until combined. Gently fold in the ground chicken.
  3. Shape the mixture into 1½-inch meatballs and place them in the slow cooker.
  4. Pour the remaining marinara sauce over the meatballs.
  5. Cover and cook on LOW for 6 to 8 hours.
  6. If desired, add mozzarella during the last 15 minutes of cooking.
