  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • Juice and zest of 1 lemon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • Fresh parsley for garnish

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté diced onion for about 3-4 minutes until softened, then add minced garlic and cook for an additional minute.
  2. Transfer the onion and garlic mixture to the slow cooker. Place chicken breasts on top and season with thyme, rosemary, lemon zest, salt, and pepper.
  3. Add uncooked rice around the chicken and pour chicken broth over everything. Drizzle fresh lemon juice on top.
  4. Cover and cook on low for 3-4 hours or high for 1.5-2 hours until the chicken is fully cooked.
  5. Once done, stir in frozen peas and shred or slice the chicken before mixing everything together.
