  • 1 pound baby potatoes (red or Yukon Gold)
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley
  • Cooking spray

Instructions

  1. Boil baby potatoes in salted water for 18-22 minutes until tender.
  2. Preheat your oven to 425°F (220°C) while the potatoes are boiling.
  3. Coat a baking sheet with cooking spray, then drain the boiled potatoes and arrange them in a single layer.
  4. Smash each potato to about half an inch thick using the bottom of a glass or potato masher.
  5. In a bowl, mix melted butter with minced garlic, Italian seasoning, salt, and pepper; drizzle over smashed potatoes.
  6. Sprinkle grated Parmesan cheese on top and bake for 20-25 minutes until golden brown and crispy.
