  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • ¼ cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt

Instructions

  1. Brown the butter in a saucepan over medium heat until golden and nutty.
  2. In a mixing bowl, combine cooled brown butter, sugars, and maple syrup until smooth.
  3. Add the egg yolk, vanilla extract, and pumpkin puree; mix well.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  5. Gently fold the dry ingredients into the wet mixture until combined; chill dough for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough into balls; roll in a mixture of white sugar and pumpkin pie spice before placing on sheets.
  8. Bake for 10-14 minutes until edges are set but centers are slightly underbaked.
