  • 150 grams active sourdough starter
  • 325 grams warm water
  • 25 grams honey
  • 20 grams avocado oil
  • 500 grams white bread flour
  • 10 grams salt
  • 78 grams melted butter (for filling)
  • 2 tablespoons cinnamon
  • 99 grams sugar
  • 225 grams powdered sugar (for icing)
  • 1 tablespoon vanilla

Instructions

  1. Prepare your sourdough starter; ensure it is active and bubbly.
  2. In a large bowl, combine warm water, starter, honey, and oil. Mix well.
  3. Add flour and salt to form a shaggy dough; let it rest for an hour (autolyse).
  4. Knead the dough until smooth, then perform stretch and folds over 2 hours.
  5. Roll out the dough into a rectangle; spread melted butter, sprinkle cinnamon-sugar mix and plumped raisins over it.
  6. Roll tightly into a log; cut into equal rounds.
  7. Place in an oiled pan and let rise until puffy (60-90 minutes).
  8. Bake at 350°F (175°C) for about 25 minutes or until golden brown.
  9. Prepare icing by mixing powdered sugar, melted butter, vanilla, and enough milk/water to achieve desired consistency; drizzle over warm rolls.
