  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg (room temperature)
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbsp unsalted butter (room temperature)
  • 1 cup semi-sweet chocolate chips
  • Topping: 1/4 cup whole milk
  • 1/4 cup cocoa powder
  • 1 cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. In a mixing bowl, combine whole milk and active sourdough starter; whisk until smooth. Add cane sugar and egg, then mix in bread flour and sea salt until a dough forms.
  2. Knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise for 4–6 hours until doubled.
  3. For the filling, blend softened butter, cane sugar, cocoa powder, and chocolate chips in a separate bowl.
  4. Roll out the risen dough into a rectangle about 1/4 inch thick. Spread the filling evenly over the dough.
  5. Roll tightly into a log shape; cut into 12 equal pieces and place on a parchment-lined baking sheet.
  6. Cover rolls again and let rise for another hour until puffed up.
  7. Preheat oven to 350°F (175°C) and bake for about 25–30 minutes until golden brown.
  8. For the topping, whisk together milk, cocoa powder, powdered sugar, and vanilla until smooth; drizzle over warm rolls before serving.
