  • 1 cup brown sugar (divided)
  • 1 tbsp cinnamon
  • 1 3/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup melted butter
  • 1/2 cup sourdough discard

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a small bowl, mix together 1/3 cup brown sugar and cinnamon to create the swirl filling.
  3. In another bowl, combine flour, remaining brown sugar, baking powder, and salt.
  4. Whisk together egg, milk, melted butter, vanilla extract, and sourdough discard in a separate bowl until smooth.
  5. Gently mix wet ingredients into dry ingredients until just combined; lumps are fine.
  6. Pour half the batter into the loaf pan; sprinkle with three-quarters of the cinnamon mixture. Top with remaining batter and sprinkle with the rest of the cinnamon mixture.
  7. Use a knife to swirl through the batter gently.
  8. Bake for about 45 to 50 minutes or until a toothpick comes out clean.
  9. Cool for about 20 minutes before transferring to a wire rack.
