  • 4 cups cooked chicken (cubed)
  • 1 can (14-ounce) black beans (drained and rinsed)
  • 1 can (14-ounce) corn kernels (drained)
  • 1 cup cherry tomatoes (halved)
  • 1 large avocado (diced)
  • â…” cup red onion (thinly sliced)
  • ¾ cup shredded cheddar cheese
  • â…” cup fresh cilantro (chopped)
  • ½ cup plain Greek yogurt
  • 3 Tbsp avocado oil or olive oil
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 2 Tbsp fresh lime juice
  • 1 Tbsp pure maple syrup
  • 2 to 5 chipotle chilis in adobo sauce
  • 1 large clove garlic (minced)
  • ½ tsp sea salt (to taste)
  • ¼ tsp black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine chopped spring greens and cubed chicken.
  2. Add black beans, corn, cherry tomatoes, diced avocado, sliced red onion, shredded cheddar cheese, and chopped cilantro.
  3. In a separate bowl, whisk together Greek yogurt, oil, vinegar, lime juice, maple syrup, minced garlic, chipotle chilis, salt, and pepper until smooth.
