  • kosher salt & black pepper (to taste)
  • ¾ tsp ground cumin
  • ¾ tsp chili powder
  • ¾ tsp smoked paprika
  • cayenne (optional, to taste)

Instructions

  1. Cook the chicken: Season the chicken breasts with salt and pepper in a pot filled with water. Bring to a boil, cover, reduce heat, and simmer for 15-20 minutes until fully cooked (165°F internal temperature).
  2. Shred the chicken: Transfer cooked chicken to a bowl and shred using two forks or a stand mixer.
  3. Prepare the dressing: In another bowl, whisk together Greek yogurt, lime juice, cumin, chili powder, smoked paprika, salt, pepper, and cayenne (if using).
